Vegetable BiryaniFlorets of Cauliflower-80gGreen peas,shelled-50gDiced carrots-60gDiced French beans-50gDiced baby corns-60g Diced Mushrooms-50gBasmati Rice-550gFried & Browned onions-100gTurmeric Powder-10gYoghurt-100gChopped mint leaves-10gChopped coriander leaves-10gHung Yogurt-100gBayleaf-3 nos Cloves-8 nos Green Cardamom-6 nos Ghee-80gCinnamon sticks-2 nos Salt to taste Chili powder-10g Saffron strands: a pinch .Method: Wash & clean the rice until the water runs almost clear.In boiling water add the cinnamon,cardamom,bay leaf and cloves. Add in a spoon of ghee and boil the rice till it is half done.Drain and keep it aside.Individually blanch all the vegetables and keep aside.Mix together the browned onions & the yogurt.In a thick bottomed pan, heat the ghee. Add in the onion-yogurt mixture. Fry well. Add in the rice, the hung yogurt and saffron strands.Mix this gently and add in some water to cover the top(approximately 500 ml). Add in the blanched vegetables and simmer till the rice is cooked soft and fluffy and all the liquid has been absorbed
